Mild umami base, low acid, soothing. One of the safest hot liquids for GERD.

Antioxidant lignans; anti-inflammatory when used as finishing oil in small amounts.

🟡 Moderate
Soy Sauce (low-sodium)

Miso Paste
Fermented — probiotics may help gut flora but very high sodium.

Tempura (fried batter)
Deep fried — oil absorption significantly delays gastric emptying by hours.

Extremely high fat + sodium. The richest, most reflux-triggering ramen type.
Found in: Tonkotsu Ramen
⛔ Critical
Wasabi
Allyl isothiocyanate — extreme mucosal irritant via same pathway as capsaicin.
